Chef Laurie's Recipe: Fish Tacos with Avocado Salsa

CHARLESTON, S.C. (WCIV) - Chef Laurie's prepared Fish Tacos with Avocado Salsa

1/2{} lb flounder, cod or haddock sliced into 1/2 in strips 2 Tablespoons Cajun seasoning

4 Hard or soft taco shells

1 cup fresh salsa

1/2 cup low fat sour cream

1 cup shredded lettuce or cabbage

Salsa:

1 pint of grape tomatoes

1 small red, yellow or green bell pepper, diced

1 small red onion, diced

1/2 cup loosely packed fresh cilantro leaves

1 teaspoon salt

pinch of ground cumin

1 large avocado, diced

1.{} Preheat oven to 425 degrees. 2.{} Line a cookie sheet with parchment paper.

3.{} Lay fish filets on parchment in a single layer on one side of the cookie sheet.

4.{} Sprinkle fish filets with Cajun seasoning.

5.{} Lay taco shells on parchment next to the fish.

6.{} Lightly spray fish and taco shells with olive oil.

7.{} Place in oven and bake for 8 minutes or until fish is just cooked through. Cool slightly

Salsa:

  1. Place all ingredients except for the avocado in the bowl of a food processor.
  2. Pulse until chopped fine.
  3. Add salsa to a bowl and add the diced avocado.
  4. Fill taco shells with the fish, salsa and lettuce.
