Sun Flower Power Balls Recipe

      CHARLESTON, S.C. (WCIV) -- Author and cook Jill Dahan shows you how to start the day fresh with some simple and delicious sun flower power balls.

      1/2 cup (1 1/2 oz) (42g) Oat Flour*

      3/4 cup (6oz) (170g) unsweetened sunflower seed butter

      2 tbsp coconut sugar

      1 tbsp vanilla bean paste

      1/3 cup (1 1/4 oz) (35g) mini dark chocolate pieces (optional)


      Mix sugar, vanilla and sunflower butter, combine thoroughly.{} Mix in oat flour and chocolate pieces if using.{}

      Roll into 2-inch balls and place on baking sheet. With a fork, press lightly in a criss cross pattern on the top of each cookie until flattened slightly.{} Bake at 350 degrees (180c) for 7-8 minutes until lightly browned.{} Leave to cool on baking sheet before removing.

      *To make your own oat flour, simply grind 1 cup old fashioned oats in a blender until fine. Makes 1 1/4 cup oat flour.{} Excess oat flour can be stored at room temperature for future use.
