      Black Bean & Couscous Salad

      CHARLESTON, S.C. (WCIV) -- Here's a simple recipe that can be the start of healthy eating for the new year. It's great as a salad or side dish as it has protein and carbs already. Adding more veggies to make it a more complete meal is also an option.

      1 1/4 Cup VeggieStock

      1 Cup Couscous

      3 OZ Olive Oil

      2 OZ Fresh LimeJuice

      2 tsp Red WineVinegar

      1 tsp Cumin

      1/4{} Cup Scallions chopped

      1/4 Cup Corn

      2 Cans BlackBeans rinsed

      Prepare Couscousaccording to package directions.

      {}

      Whisk togetheroil, lime juice, vinegar and cumin. Add remaining ingredients, toss to mixflavors.

      Add fluffedcouscous and mix. Chill and serve or serve warm.

      Serve withgrilled chicken, fish or shrimp or enjoy as is.
