Chef Kim came on Lowcountry Live to show us how you can satisfy both your sweet tooth and taste for BBQ on the grill in one swoop. Grilled Chicken and Pineapple Salad Ingredients:4 Grilled Chicken Breast or Thighs - boneless/skinless Medium diced1 cup Grilled Pineapple - diced 3/4 cup Mayonnaise 1/2 cup Almonds - toasted 1/2 Red Bell Pepper - diced 1/2 Red Onion - diced 1/2 cup Celery - diced 3/4 tsp Curry Powder1 Tbl Cilantro - choppedSalt & Pepper to tasteCombine all ingredients except the chicken which will be added in last. Adjust seasonings if desired. Serve with toasty bread or crackers or on top of salad greens.
