      Chef Laurie's Recipe: Roasted Shrimp and White Beans Salad

      CHARLESTON, S.C. (WCIV) - Chef Laurie's prepared Roasted Shrimp and White Beans Salad on Lowcountry Live Monday.

      1 lb fresh large or medium shrimp ( peeled de-veined)*

      1 Tablespoon olive oil

      Salt and pepper

      1/4 cup fresh garlic, chopped

      2 cups cooked white beans

      2 Tablespoons fresh lemon Juice

      1 teaspoon fresh lemon zest

      1/4 cup fresh parsley chopped

      1 Tablespoon olive oil

      Salt and pepper

      1. Pre Heat{} oven to 450 degrees
      2. Line a cookie sheet with parchment paper
      3. Place shrimp on parchment paper
      4. Spray shrimp with olive oil.
      5. Sprinkle with garlic, salt and pepper
      6. Toss to coat shrimp well
      7. Roast in oven for 8-10 minutes depending on size
      8. Meanwhile in a medium size bowl, add the beans, lemon juice, zest, parsley, olive oil, salt and pepper
      9. Add hot shrimp to bean mixture, mix well

      • Call ahead to your fish store and ask them to peel and devein your shrimp for you.
