Mira Winery expands underwater aging across US

CHARLESTON, S.C. (WCIV) -- After a successful underwater aging experiment in Charleston, Mira Winery has decided to expand its Aquaoir testing to other areas.{}The company will let people age wines in rovers, lakes, harbors, and other bodies of water. People can also order an underwater-aged 2012 Cabernet Sauvignon."Once we confirmed that the initial phase of this experiment was a success, we wanted to make it easier for others to do the same and have a collective discussion about the impact of aging wine under water," said Jim "Bear" Dyke, Jr., Mira Winery President. "By learning more about the water's effects, we hope to glean information that will allow us to innovate how we age wine on land as well."Last May, the company pulled up four cases of wine that were kept on the bottom of Charleston's Harbor. The company currently has eight cases of wine being aged for six months, which will be pulled up sometime in May."We have established that ocean-aged wine, over the course of three months, took a divergent path from the same wine aged on land in a traditional environment," Dyke said. {}"Experimenting with the same wine over the same period of time in different underwater environments, and testing it against the same wine aged on land will allow us to narrow our focus on what is impacting the change."This fall, people will be able to submerge their own bottles in bodies of water all over the country. People who participate will be able to provide their findings to Mira.{}Each individual who chooses to participate will receive a custom-built cage loaded with 12 bottles of wine at a cost of $2,200 plus shipping. Orders can be placed at and must be received by August 1, 2014. Cages with wine will be delivered in the fall.
